Birthday (or Anyday) Custard Pots.

Change the way you label your eating. It's not 'a treat' if it's not fueling you properly.


With three children in my house, we often have plenty of visitors to the home. I always try to have tasty snacks ready and available to whoever comes to call.


Party food doesn't have to be loaded with sugar !!

If you make healthy food available, children will choose it...most of the time !!

I have three children, two boys and a girl. Their food choices are all very different. One loves vegetarian food; one eats pretty much anything and one will NOT eat fruit and vegetables without physically retching - Meals times are always an interesting time in our home.


I came up with these little pots of sweet, creamy, fruitiness in the hope all three children would like them - Bless, two did & it wasn't the two I was expecting !!

Thankfully, ALL their school buddies devoured the lot.


Raw Custard Pots with Raspberry Coulis

2C young coconut meat

1 very ripe mango

3/4tsp turmeric powder

2C organic raspberies

1/4C coconut nectar - use to sweeten to preferred taste

A handfull of blueberries


Make certain the coconut meat is free from woody shell. Mix the meat, mango & turmeric together in a blender. The young meat should be sweet enough & juicy enough to blend into a thick cream with the mango. Chill in fridge - it will thicken up to a custard consistency.


Coulis : Blend washed raspberries & coconut nectar, in a blender. Push blended fruit through a fine sieve to remove small seeds.


Spoon the custart into pots and top with the coulis. Decorate with blueberries.
